Procedure:


1. Prepare the milk sample:

   - Mix the milk sample thoroughly to ensure homogeneity.


2. Measuring the milk sample:

   - Using a pipette or measuring cylinder, measure 10 ml of the milk sample and transfer it to a Gerber butyrometer or fat testing apparatus.


3. Adding sulfuric acid:

   - Add approximately 1 ml of concentrated sulfuric acid to the milk sample in the butyrometer. Exercise caution and follow safety guidelines when handling sulfuric acid, as it is highly corrosive.


4. Mixing and heating:

   - Mix the milk and sulfuric acid mixture thoroughly by gently shaking the butyrometer.

   - Place the butyrometer in a water bath or heat it directly using a heating source. Maintain the temperature at around 65°C to 68°C (149°F to 154°F).


5. Centrifugation:

   - After heating for 5 minutes, transfer the butyrometer to a Gerber centrifuge. Ensure the butyrometers are balanced in the centrifuge by placing them in opposite positions.

   - Centrifuge the samples at approximately 1,200 to 1,400 revolutions per minute (rpm) for 5 minutes.


6. Reading the fat content:

   - Remove the butyrometers carefully from the centrifuge without shaking them.

   - Allow the samples to cool for a few minutes.

   - Read the fat content by observing the fat layer formed in the calibrated neck of the butyrometer. The fat content is indicated by the scale on the butyrometer, typically expressed in percentage (%).
